I need NPSC and I have the tap for it.  Can I buy a NPT female fitting and just cut the threads using my NPSC die?

Edit.  Last word should have been tap not die.

What size and what material?

Generally yes, but if the material is too strong (steel) or the size too big (above 1"), you'll break your tap.

It's stainless and the size is 1 inch 11.5 tpi.

Don't you hate when you google something and find the same question asked before but never see the final result?  Me too!  So I got the 1 inch NPT coupling in and tried my 1 inch NPSC tap.  It was so tight I didn't even want to try and get it started.  That said I put the 1 inch NPSC part into the coupling and it seems it'll seal up enough so good to go.  I'll follow up if it's not water tight once done.
