Online LMS with fillable forms?

The search function isn't working for me right now so I apologize if this has already been discussed (I seriously doubt it, though).

I am a technical trainer for a large electric utility and we currently use a 3rd party online LMS to house all of the lessons and assignments.  Students have to scan, save and upload documents to the course for grading but this can create a nightmare for exam security.  The platform I'm currently using does not allow for providing blank documents that can be filled out in the course and saved to the assignment/exam.  Does anyone have an idea on an online LMS that has this functionality?  I currently use Canvas.

No suggestion, but avoid Northpass, which, at my last job, we had lots of troubles with: inflexible, auto-emails were troublesome, API issues, and we had to go against MS best practices and enable an email method that increased our cybersecurity risk a bit. Our primary users -- health-and-safety and HR staff -- all asked to replace it.
