Any reason why not to go with a chain set up like the video? It seems to me the easiest way to get the gearing reduction. Otherwise maybe a worm drive set up. Some digging through a Grainger catalog should turn up something. Make sure whatever motor you choose can be reversible. Not all can be.
I am waiting for reasons why a garage door opener is a bad idea. Heck I have two old openers ready to be organ donors. I had pretty much given up on motorizing mine and planned on beefing it up building a wheel and calling ita day

Speed control would ve my only concern. Mine would probably just get geared to 'slow' and be done with it though
My only concern with a garage door opener would be the duty cycle. That motor is only designed to run for a few seconds at a time. They are designed to reverse, so that's a plus. Plus, many use a chain drive gear reduction to get the torque multiplication.
I'm pretty sure the setup in the video is single speed, but is geared so low it doesn't matter. Without getting into pricey speed drives, using a 12v dc motor should allow for a relatively simple resistive speed controller.
Wait. Just saw a guy using a treadmill motor. And the speed control on a treadmill would work great.

Low rpm, plenty of torque, etc.

My old garage door opener is 1/3 hp. That $40 gearset has 1/20 hp. If you use a sprocket to get down to the same rpm with the door opener, you will have much more torque. With the door opener you have two different ways to control it (the button on the wall and the IR sensor at the floor). So there is some cleaverness to be had there.
That gearset is pretty tempting, price wise, though...
How quickly and accurately you can stop it is important also. Don't forget that.
Unless of course you have real speed control and can slow right to nothing
