You know... I really dig SRV, Jimi, and understand why folks like EVH (though not my sound), but I took a listen to Brothers In Arms, and it is just so gripping... Knopfler is not only technically excellent, but takes that to another emotional level that EVH can't.
Knopfler greatness
Mark Knopfler is great, I'll back up 'Why Worry' two or three times. Someone else whose singing I like is Sting from The Police, the 'semi acoustic' version of 'Don't Stand So Close to Me' is worth a listen or 3 too.
I guess the 80's weren't as big a music wasteland as I sometimes think.
As far as "shredder" stuff goes, Paul Gilbert FTW. Bonus points for his sense of humor:

And while the tritone tapping and lightning fast licks are cool, I think buckethead is at his best when he's creating interesting melodies with a live band...and that vintage Rocket Roll V. Unnnnnnngh:

Kirk Hammett pretty much kills it in the solos in Unforgiven 1 and 3..
I think he said in interview that he felt his solo for Unforgiven was what he felt was his perfect guitar solo.
Personally, my favorite is the bit near the end of "One" with the descending sets of quadruplets. I'm not a music-talkin'-guy so here is a link: https://youtu.be/sXPkmIwwobA?t=6m34s
This sucks in a way because I hate the actual song. It's too repetitive and egregious.
"Kills it" like "strangles every note to the point where it sounds like a dying cat and exacerbating the problem with copious wah usage?"
I swear they hired a pinch-hitter for his solos on Justice. Hetfield is bar-none the better of the two, which really isn't saying much. The two of them SLAYED it on Justice. The "Black Album" and subsequent albums left a lot of people (myself included) wondering "Did they suffer brain injuries or something?"
You know you suck when Winger's guitarist is (rightfully so) calling your ass out.

Nugent's Stranglehold is pretty sweet too. http://www.youtube.com/watch?v=0c3d7QgZr7g
I'm +/- on Nugent but I consider Strangelhold to a be a masterpiece.
Agreed. I think Nugent is a douche, but the song rocks. I also can't stand Clapton, but he has some sweet licks.
I just searched "Kirk Hammett" on youtube and this is toward the top of the results.

Good cover by Big Sugar
It's funny--they're basically unknown in the States, but I caught that cover on Sirius Deep Tracks maybe 5 years ago and I've dug it ever since (bought the mp3).
I'll throw out there Clapton's rendition of Five Long Years on his From the Cradle album

but the entirety of his Unplugged version of Old Love might be my favorite

I like my guitar solos simplistic and full of emotion. So...
Shine On You Crazy Diamond
Lots of good stuff mentioned in this thread. I'm still sticking with Bold as Love as my favorite solo(s). Though if I had to pick a favorite player it would be Duane Allman. The guy essentially invented southern rock.

berkeley Eric Clapton. Seriously. They should change "Slowhand" to "The Butcher."

"Strawberry Letter 23." the original Shuggie Otis version:

he was 16 when he wrote and recorded it. There's so much youthful enthusiasm and joy in it. No matter what mood I'm in, those guitars just make me feel better.

Shame on us for not mentioning the original "guitarist's guitarist" yet...

Wouldn't that be Chuck Berry?
Animals as Leaders guitarist Tosin Abasi on his 8 string guitar. He said learning the 8 string was no big deal since he was already playing a 7 string.

Yes. My bad. That statement should have added a, "not counting all the old blues players" disclaimer. That's a whole different discussion.

Joe Satriani fan here. Saw him in concert once around 1989 in VA at a hole in the wall club, then again last year at Music Hall in Cincy. Surfing with the Alien is still one of my "desert island" CD's.

I thought I was in the vast minority for hating Clapton. He's only at his best when he's trying to sound like someone else. Don't get me started on the crap he writes.
And that's leaving aside the whole "quits the Yardbirds in a massive huff because they are not being true to the blues, and 3 years later founds Cream" thing.

SRV is the best in my book. The intro to Couldn't Stand the Weather is my favorite by just a little. In addition to that: Lenny, Riviera Paradise, Hendrix's Voodoo Chile, Texas Flood. The version that's on the box set is from the Montreux (?) Jazz festival and you can hear booing in the background, because he didn't quite fit with some of the audience. But he had a lot of Jazz in his playing. There were a lot of stragne jazz chords in there.
The intro to One World is my favorite segment of Brothers in Arms by Dire Straits. Meaty.

Most overrated guitarist ever, IMO.
You know, Zappa was a real hack on guitar, and readily admitted it, but he did create some really incredible improvisational pieces. I will have to change my answer to Rat tomago.

Glad I'm not the only one.
As far as Zappa goes, Apostrophe (the song) is bad ass.
