Venturing further off topic into the angry ravings of an old man there was a time a good bagel shop wouldn't toast a bagel. It wasn't until kids started moving into the city raised on E36 M3ty bagels that needed to be toasted to be edible that toasting became popular.
My mother in-law works in the corporate office for a regional pizza place in Arizona and they apparently replicate NYC waters mineral content for the dough. The pizza is damn good too. Never been to New York so I can't compare but is is one of the better NYC style pizza that I've had.
OK, so great pizza has minerals in the water, not gators.
Maybe mine borehole water is the secret to Old Forge pizza.
