I found out the transaxle for my 74 Stupor Beetle is an AH code IRS trans. Any idea how much power these are good for? Can it hold around 300 horses?

Torque kills trans not hp. That being said, unless you drive like my grandma I can't fathom this thing lasting with the 6" ring gear
Being that transaxle was designed for something like 60hp, I really don't think it could handle anything near 300hp stock...
Well I've found axles rated for 500 for somewhere in the neighborhood of $900. But could I make the stock transaxle live until then if I drove like your grandma?

Sure... Anything will work if you let it...
You'd want a bus trans or reversed Subaru box(http://www.subarugears.com/Pricing/Pricing.html) for that kind of power.

Reminds me of the 67 Nova in our group. Runs a 496 with a big hit of nitrous. The owner calls it "grandma's grocery getter"
I'm highly skeptical of a $900 trans for that power. What engine are you running? Another option is a porsche 915 which gets you an extra gear
I would be more inclined to run the Porsche trans... but I do need to see how compatible the Subaru one is

I've got a single port 1600cc now but I'm building a 2100cc stroker engine to put in it
Does the new engine in life a turbo? Otherwise 300hp seems really optimistic. Hell it's optimistic with a turbo

Not even close, the R&P will come apart along with everything else.
You need a custom built Pro-Street style transaxle minimum. With the torque accompanying that horsepower, you'll more than likely need a proprietary built race-only trans. Of course a 300 HP VW based engine will only last a moment or two anyway unless built by an EXCEPTIONAL professional using ALL after-market parts and pieces, so maybe you could stick with the stock trans after all.
Speed, especially with VW components, cost money. Then a lot more money after that.
