This is a great idea. But the Z is red. Deal breaker
Volvo 240 wagon, add 960 motor mounts and whitetop motor, stir, while stirring re-do electric system, upgrade fuel system and add boost.

The Samurai's not scary at highway speeds, although the time taken to accelerate to them is a bit frightening
I've driven them right up to their top speeds of 110~120kph quite comfortably
Mercedes MLwhatever, get one with a V8. Reasonably reliable, capable, and comfortable. Your fleet seems to lack a nice daily driver.
Guys, he's asking about a daily driver, so I think we need to keep suggesting huge vehicles that are basically no better functionally than the Cherokee he still owns.
Swank, what about a Buick Park Avenue with the blower 3.8?
What's a LM002 going for these days?
Edit, scratch that yikes! I figured they were expensive but not that expensive.
Defender?
Discovery with basically any other engine swap?
So many boring choices. You know the answer here: Allroad!
Twin turbo goodness, air adjustable on-the-fly suspension, plenty of fodder for your desire to tinker on things. Available six speed manual trans.
And hands down the best thing ever on a snowy/icy road.
Someone said it earlier, but third gen 4Runner. Can be found with manual and 4x4, reliable as gravity, rear power window is awesome. I had one, sold it, and now miss it (although not the unicorn 5-speed 4x4). I will have another.
I've driven an XJ (not owned), and it seems very similar except the driving position in the 4Runner is more "car-like".

I'm gonna pile on the Buick love (whether facetious or not) here and advise him to get a Buick Rendezvous.

I've never had a DD blow up in my life.
And there's no way in hell i'll drive a new "Cherokee." That's not a Cherokee. That's a hideous and stupid car-based cute-ute garbage whatever.

So, a red one then?
I think the new Buicks come from ze Germans though. Not the Rendezvous though.
