Seems like nobody here ever develops a project based on the "other" Mitsubishi platforms, i.e. the Galant, etc. Are they simply not sporting enough from the factory or is the lack of aftermarket the problem?

I've had my 04 Ralliart wagon for almost 11 years. It's a daily, so not tempted to modify it. Reliable as a hammer, and fun to drive, despite being an automatic.
Parts availability would definitely be an issue, and it's hard to find someone who knows how to tune one properly.
Honestly, Most of the cars just never survived.
I built a really slick FSP mirage back about 8 years ago and getting parts then was a real challenge. I had a lot of parts shipped from ANZ for that one. I even had to hand make my coilovers for it out of A1 VW parts to get a good shock in it.
I would buy a clean 97-98 Talon in a heartbeat but never really see them that are not trashed.
The tuning part is easy. We were chipping all of the 90's Mitsubishi ECU's in the mid 2000's. Their ECU structure was actually pretty basic. I had a friend running a 310HP turbo 1.8L off a chipped factory ECU. With the later generations, you can flash them by hand just like that generation subarus.

Agree! These are really fun cars. 97 Talon was the first LeMons car that I drove. 420a has oiling issues on track, but I think it would be a great every day street car.
I've seen cool builds based on the Galant VR4, DSM, Evo 1-10, Starion/Conquest, and Montero. That's not bad for a non-mainstream car maker.
I was doing some work on a ~150k 2010 CTS yesterday. I delivered it back to the customer and drove home in our 279k mile 2002 Diamante that is holding up far better! My dad bought that car in '08 @108k and for the entire 12 years and almost 200k miles since, i've never stopped liking it and it has never had a major failure. Miles are only trickling onto it at this point as its just one old car in a quite sizable fleet of old cars, but having owned over 60 cars and thus having let go of a WHOLE bunch, i have never once thought of getting rid of this car. It's just a damn good car that feels good to drive and never gives me any real headaches.
I also have a 1987 Mitsubishi Montero that I wouldn't let go of.
Also have a 1980 mitsubishi pickup disguised as a Plymouth, and a 1997 3000gt as projects that havent been started yet.
If you count all my mitsu-derived Chrysler products in both categories, Mitsubishi is probably my second most-owned product after Chrysler.

How do you flash the ECU's ? I have a couple of 98 Avengers, the better looking Eclipse, One has a 420A and the other has a 6G73 2.5 v6. I am contemplating a 3.0 or 3.8 swap in the 2.5 car. I know that from the factory the 2.5 was running Dodge ECU's with Mitsubishi engines, but if I swap it, I would grab engine, trans, and electronics. It's a caged track car so I don't care about creature comforts and don't have to worry about mixing and matching to make it work.
97-99 model DSMs ("black box" ECU) can be flashed with a Tactrix Openport and ECUFlash, other ECUs are not as well supported. You would need to find an XML definition for the platform you're looking into. Megasquirt is probably a better solution if you want to have more control.
As others mentioned there are a lot of popular Mitsubishi platforms; starquest, DSM/VR4, 3000GT/Stealth, Evo8-9, Montero. So the other oddball vehicles just were overlooked by enthusiasts, not many were saved and driven to the ground. Add that to lack of aftermarket support compared to the heavily supported EVO/DSM market, there isn't much of a good reason to jump into other Mitsu platforms.
I just thought the "Super Street/NOPI" scene of the late 90s/early 2000s just ended up beating them all into the ground.
By the time I graduated in college at the end of 2005, I already didn't really see them anymore.

Tactrix Open Port 2.0 + ECUFlash software. There is a lot of research that was needed to figure out the code but turns out for the 4 Cylinders it's very similiar and documented online. Never looked at the 6 Cylinder.
One Mitsu/Dodge I could never get my hands on was a Colt GTS with the twin stick. It was a 1.6t with 8 gears, the Cordia also had this option. Damn one of my dream cars. I've come super close to having one but never got the deals done. A close second the box 1600 GSR Lancer from the early 80s. I also wouldn't mind an early 70s Colt.
The oddballs, Mitsubishi cordia, tredia, celeste and sapporo!

I had a 78 Colt stage rally car, though I only did a couple rallyx with it. I definitely regret selling it, but it seems to have disappeared as I've tried searching for it but haven't turned anything up. Hopefully it's in a garage somewhere & not left out to rot.

The accountant we share a building with (he ended up buying that 435 mile '03 Taurus that I posted pics of) has a mint condition Sapporo, I think an '82, that he bought new. IIRC it has 12k on it and still has the original tires.

TWELVE THOUSAND AMERICAN DOLLARS?
Don't count out the Delica too!
Not exactly a Mitsubishi, but the Eagle Summit Wagon can be 4G63 AWD swapped easily, and it was essentially a Mitsubishi RVR without the 4G63 and AWD. A friend just picked this up, Eagle Summit Wagon with 4G63 AWD Swap, Evo3 engine, RVR top mount intercooler:
And then there is this, the greatest sleeper of all time. It has run as low as 11.8 ET:
The Mitsubishi rabbit hole is deep, you just have to have to start digging past the standard answers (DSM, Evo).
The problem is a lot of the cool ones never made it state side.
One of my favorite ones from overseas is the Mitsubishi Mirage Cyborg: 1.8l 175 HP Civic Type R fighter with the Helical Diff in it. Ton of fun to drive in a package that is EG civic sized. Drove one in europe in the early 2000's and just loved it.

Oh JDM opens a ton of other possibilities!
The FTO was an oddball, most probably only know of it from Gran Turismo. A weird FWD driven V6 powertrain. The FTO and others are now eligible for importing. Looks like the Mirage Cyborg was made in 1995 (?) and is also now eligible!
A lot of car enthusiasts in the US don't realize that Mitsubishi was making the same kind of high-rpm screamers that made Honda VTEC a big thing in the sport compact scene. I think everyone knows a lot of the ~3 liter turbo japanese sports cars were doing the whole 'gentlemens agreement' ~270hp rating thing, but not many people realize Mitsubishi made a NON TURBO 3.0 v6 that hit that number too. And they put it in.. Diamantes.
