admittedly most of the AE86s now in NICE condition will run north of $3k, but you can still find pretty good ones for between $2k and $3k. (GTS models)
SR5 versions of the AE86 can still be had for under a grand... and take all the mods the GTS can
Older rwd Corollas are also fun, and usually much cheaper.... until you dump a boat load of cash into one like I've done.....

More fun, in my opinion, would be a CJ2,3, 5 or 7 with a v8 and those are all plentiful for under $3k.
Honestly.. i feel the opposite. Ive never seen a CJ-anything that wasnt a complete pile of E36 M3 OTHER than the ones that have had 3k+ dumped into them.
I think Wranglers are more fun, but as i said, its still difficult to find a 'fun' (i.e. working, 6cyl, 5spd) wrangler for under 3k.
Also, the only car i ever flipped was a SBC-swapped CJ with a turbo400 trans with first gear lockout disabled. It came in with customer complaint of 'misadjusted shifter'. I was going straight at about 30 mph, trying to shift from 2nd to 3rd, shifter decided that meant 1st gear. Long story short went from 30 mph going straight to 0mph on its side with one of the wheels ripped off.
