The Aurora was actually developed with an engine that was homologated for a race series, they made silhouette race cars with an engine that they call the Aurora. It didn't have much in common with the road going engine, but I've always really liked the street car shape, I think if you did it right, enough leather, make it a reasonable copy of a Bentley on the inside, but with a ton of power it would be a really fun ride.
C4? Came with a similar engine but it could fulfill a lot of requirements, and if wiping out the stock electronics turns out to be the easy option for the swap, then you also get a reliability upgrade. Non-runners easily available under a Challenge budget.
- Has unique kinda cute looks, could even be painted pink like something Barbie would drive...
- Available as a convertible
- Good handling

If you do that, it needs a 6-71 blower through the hood too.
Personally, if the BiTurbo convertible isnt up your alley, I would buy an old Land Rover Series I, Defender, etc with a removable top and busted or low mileage motor (possibly even flood titled), and swap it. Is a beach cruiser that is on my list (eventually), maybe you can provide me the motivation to actually follow through.
If it were me:
300zx
e36 or e46
Maybe an e39 if I needed a real back seat.
All have reasonable parts availability, great swap documentation, and chassis and brakes (or easy brake upgrades) that can can handle a fair bit of power.
