I came up with another 'bench build' the other day:
Get an extended length Town Car, preferably a 2005 or so
Then my now standard piece of 'bench build' is a 5.0 Coyote
And a manual transmission... probably what's strong enough and available. Maybe a T-56, but probably one of the other newer Tremec manuals that come in the Mod Motor Era Mustangs.
Throw as much of the P71 or better aftermarket stuff available at it.
Add in a rumbly exhaust and give away a little of the sleeper quality with some more aggressive wheel/tire combo.

I know these have their fans, but they are truly horrible to drive cars. I don't even think they are very comfortable. I'd prefer one of these:
