I imagine that handles like a nun carrying a mattress. Cleetus and gang built the the Crown Vic with the SxS rack on top and that handled atrociously.

For trainers, my father used to build Sig Kadet Seniors, except he used to add ailerons, shorten the nose to make them taildraggers, and add .75 4-strokes instead of the puny little .40 2-strokes the plans called for. They were stable and easy to learn on, but had plenty of power when you wanted to horse around.
SIG's Claude McCullogh found out about them and went on a rant about how that wasn't what he designed the plane for.
Mostly what my father flew was his 150% sized Aeromaster. It looked a lot like this, except a lot bigger - basically quarter scale if it was a real aircraft design:
