That looks yum. Excited for Bbq ribs, scratch Mac & Cheese, roasted root veggies, bread pudding, and of course cookies for Xmas eve.
I forgot to take pictures of the process for the cookies. And almost forgot to take pictures entirely.
Next time I'll add more blue food coloring. This is the way.

And finally, Beignets. Not sure if I got them right or not, I've never had the real deal.
Wagyu brisket in the pellet smoker. The flat just got salt & pepper & is also wrapped up for the last 8 hrs. The point became burnt ends.
Fat side down on the flat for the smoke for 4 hrs.
Burnt ends with the point. It's a bit wrong, but added bbq sauce to them before wrapping them up for the last 8 hrs of cooking- really low 175 deg. Got to try out my new kitchen tool, a Tuo 12" Fiery Phoenix.
Not sure what she's making, but if it starts with 3 lbs of butter and 5 boxes of cream cheese, I'm in!
TIL they're called Rugelach. Dough is rolled out, covered with brown sugar and then half of these have Apricot Preserves and half have Cherry Preserves and chocolate chips. The sugar is what prompts all the burning on the bottom.

I made Prime Rib on the smoker, Parmesan crusted cast iron skillet potatoes, and brown sugar bacon wrapped Brussels sprouts for dinner last night. It was an awesome meal.
Two slices of bread, leftover spaghetti sauce and shredded cheese on top. Throw any sausage of choice on top and throw in microwave to melt said cheese.
This is a bread recipe, but I whack it into 12s and make rolls. Using a Kitchen Aid mixer, I fill the steel bowl with hot water and let it sit for a while, too cold and the yeast won't do its thing. When they call for water or milk, I always use hot water or heated milk; I don't usually bloom the yeast.
This really does take the boring out of chicken soup!
Italian Herb Bread
10-12 oz. water
1 1/4 tsp salt
2 Tblsp oil
4 cups flour
1/3 cup Parmesian, grated
1 1/2 Tblsp Parsley
1 Tblsp sugar
1 Tblsp onion flakes
1 tsp basil
1 tsp garlic powder
2 tsp yeast (one envelope)
Mix all this together, place a towel over the bowl and let rise for 40 minutes. I cut into 12 pieces and make rolls. Bake at 350* until brownish.

Ever try Tabasco bread? I stick of butter to 1 tsp Tabasco Sauce. Sprinkle parmesian over top and broil until brown.
Today it's 20 degrees with a 10-20mph breeze. Good soup day!

1/4 cup butter
1 cup diced onion
1 cup sliced celery
1 cup sliced carrots
1/4 tsp Thyme
1/2 Bay Leaf - crumbled
Place all in a large skillet and saute' for 15 minutes.
1/4 cup flour
1 cup heavy cream
2 cups clam juice
2 cups (~1.5 lb) whitefish; cut into cubes
Haddock works for me
Blend flour into the sauteed veggies. Gradually add the clam juice stirring until smooth.
Add cream - cook until thick and boiling.
Drop in fish and cook another 15 minutes.
Serve with crusty bread.

I brought a spun steel camp/Dutch oven a couple of months ago to take camping and have been getting used to using it over coals. So far it's been great!
These are a couple of the latest efforts. A whole roast chicken and a Lancashire hot pot.
