 Turkey burgers and Portobello burgers are gooood.  Chicken burgers too..  mayo works real good with chicken and turkey burgers since they are so lean.

First of all, I'm a none believer.  But, go find yourself a Seventh Day Adventist friend.  Loads of great recipes and good food

The one other minor detail is my wife has chrones so it's kind of balancing 2 different diets. She can't really have grease or hard to digest vegetables. I'm always looking for new pasta sauces so some of these are awesome.

The Lecso recipe intrigued me, so I made it last night.  

After sauteing the vegetables, pushed them aside to partially cook the eggs:

The final result was...OK.  Mrs. VCH wasn't a huge fan.  I went a little light on the Paprika, but the main issue seemed to be the texture of the eggs.  Perhaps I didn't cook them long enough before mixing them in with the veggies, the texture seemed a bit...grainy.  Next time I think I'll scramble them separately and mix them in at the end. A little extra heat in the recipe would help, too- maybe a little crushed red pepper.  Some meat mixed in would help, too.  

I also fried up a batch of fresh-cut home fries, and those were a big hit.
