Fresh Jalapenos, make an incision down the centerline and remove the seeds.

Italian sausage patty cut into 3/8" wide slices. Similar sized blocks of sharp cheddar.

Put a slice of sausage and one of cheese inside each pepper, then wrap it with bacon.

Cooking 101 tip: Keeping your toothpicks in a seasoning jar makes the easy to get to and keeps your greasy fingers off the ones you don't use today.

I put them on the grill, low to medium heat until the bacon is crunchy and the cheese is melted.

These could also be baked in an oven.

You should also soak the toothpicks, the wet wood won't char as easily.

ive done similar but with cream cheese and sausage.

i prefer them after they've been grilled and then cooled in the fridge.

Well, from a horticultural standpoint it may be considered a fruit, although I think that peppers on the whole are relegated to vegetable classifications despite the seeds.

Nutritional and culinary viewpoints see it as a vegetable.

I absolutely LOVE jalapeno poppers. I usually fill them with cream cheese though, but I like the idea of a hard cheese in them.

I've found that broiling them gives a much more even cooking without the flare ups the bacon grease creates.

I also use pre-soaked skewers instead of toothpicks. I find the toothpicks tend to burn, especially on the grill.

I will have to try those. I make them with duck or goose breast, they are great.

Definitely doing this. I especially like the goat cheese idea, although seems like cheddar might go better with the bacon. Looks like some experimentation is in order!
