I'm looking to add a 5-7" LED/LCD Monitor to my truck for a couple of purposes.

 

1.  Would like to add a front mount camera to the grill for parking purposes, dashcam as possible secondary. 

2. View Torque Pro data from my phone.

 

Let's assume Svideo and USB inputs.

I think those are mutually exclusive.

5-7" LCD displays for auto use with S-video input are pretty easy to find on Amazon, etc.  There are even head units with built-in screens or power retractable screens for single din use.  This is an analog input.

To display data from your phone, you'd need to ensure the app and phone are capable of displaying information on an external display and often those are limited by HDCP over HDMI.  A 5-7" LCD HD display with HDCP won't be as cheap or easy to find.

Another option would be to use a cheap tablet to run Torque directly with an analog to digital converter plugged into the tablet's USB port.  It won't be as seemless since you'd likely have to swtich apps automatically, but it might be cheaper than replacing the head unit with an Android powered one (which can be locked down to prevent apps like Torque, but they tend to do a good job of dealing with external cameras, so research them thoroughly before pulling the trigger).

I don't want to replace the head unit.    It's a Ford Sync3 system that controls many features of the truck.  Alas,  lawyers prevented an Aux video input to it.

a lot of aftermarket hacker types have figured out how to do phone mirroring over factory interfaces.  I know there were kits for phone mirroring in my prior BMW.  Quick google shows a few options out there for Sync 3.  

There's also ways to hack the video input to allow aux video inputs.  I haven't used anything specific to Sync 3, but again they're out there.  Google phone mirroring sync 3, or aux video input sync 3 and you'll find a few plug and play options.

Yep.  It's possible a cheap tab will the way to go.  I'll have to look into the USB / Analog cables.

How about a wifi camera for your front mount? Like This

Add $50 Amazon fire tablet and you have everything you need for relatively cheap.

I run Torque Pro with a bluetooth dongle on an Android tablet in my Outback.  If you could find a camera with BT or Wi-Fi you could run an app for that also. My Asus tablet will run split screen but I have never used it that way.
