Basically I need to be able to have a metal rod move up and down through the hull of a jon boat while obviously keeping water tight integrity. It doesn't need to pivot or anything crazy, just move up and down. What type of search terms can I use?

dare I ask what you are using it for?

In all honesty, a stuffing box and shaft seal are mostly made for things that rotate.. like the shaft that runs the prop. If all it is going to do is go up and down, you may be able to get away with a simple pipe that is sealed to the bottom of the boat and comes up above the waterline. The steering Shaft on my sailboat's Rudder is a simple piece of bronze bonded to the 'glass of the hull.

At most, you may need a small seal at the top to keep water from spraying out the top at speed

Mad-machine nailed it. All you need is a tube bonded to the bottom of the boat that is taller inside the boat than the waterline is outside the boat.

What are you doing? Is it just an anchor spud or something more novel?

Wow, yea the tube is such an easy solution. I think I might be able to make something along those lines work. Great idea
